Cozonac bucovinean cu nucă și mac



Pentru că se apropie Paștele, m-am gândit că ar fi binevenită o rețetă de cozonac pufos și aromat, bineînțeles baby-friendly 😄 
Singurul cozonac care ne place la toți este cel bucovinean, cu aluat opărit și cu (muuuuultă) umplutură de nucă, respectiv de mac. Mi-a luat ceva timp până să mă încumet să-l fac (recunosc, mi-era groază de frământat) dar, odată ce am realizat că pot frământa cu robotul de bucătărie, cozonacul a devenit nelipsit de pe mesele noastre de sărbători.

Rețeta originală (celebră, de altfel) aparține Silviei Jurcovan. Eu am preluat-o de pe blogul acesta si am adaptat-o pentru a fi baby-friendly, în principiu prin folosirea curmalelor hidratate în locul zahărului. Trebuie spus că rezultatul nu este atât de dulce ca originalul, ci mai mult aromat. Pentru copii este, însă, ideal, mai ales alături de o cană de lapte cald sau de iaurt.

*Tips and tricks:
- când ne apucăm de cozonac, toate ingredientele trebuie să fie la temperatura camerei (mai puțin untul, care oricum se topește). Așadar, este bine să lăsăm ingredientele pe masă peste noapte. Eventual laptele poate fi ținut în frigider și încălzit puțin (la temperatura camerei) înainte de a fi folosit.

Ingrediente - pentru doi cozonaci:
- 1100 g făină albă de grâu (am încercat și cu făină integrală, dar nu iese așa pufos);
- 8 gălbenușuri;
- 600 ml lapte;
- 50 ml ulei;
- 60 g drojdie proaspătă;
- 200 g unt;
- 8 curmale hidratate (rețeta originală conține 250 g zahar, cele 8 curmale nu îndulcesc nici pe departe la fel de mult, ci dau doar o ușoară tentă de dulce);
- coajă de la o lămâie și de la o portocală bio;

- semințele de la o păstaie de vanilie;

- o linguriță rasă de sare (se poate omite, dacă există restricții).

Ingrediente - pentru umplutura cu nucă (1 cozonaccu muuuultă umplutură):
- 250g nucă măcinată;
- 2 linguri pudră de roșcove;
- 6 albușuri bătute spumă;
- 3 curmale blenduite (sau mai multe, dacă doriți să iasă mai dulce).

Ingrediente - pentru umplutura cu mac (1 cozonac cu muuuultă umplutură):
- 250g de mac măcinat;
- 200 ml de lapte;
- 3 curmale blenduite (sau mai multe, dacă doriți să iasă mai dulce).

Într-un castron se pun 100g de făină. Se înfierbântă 200ml de lapte și se toarnă peste cele 100g de făina, amestecându-se puternic cu o lingură de lemn, pentru a nu se forma cocoloașe. Se lasă la răcit.

Într-un alt vas, se freacă bine drojdia, până se lichefiază. (În rețeta originală, se adaugă o lingură de zahăr peste drojdie, pentru a o "activa". Eu am încercat și cu și fără lingura de zahăr, a ieșit bine în ambele variante). 

După ce aluatul opărit s-a răcit, se adaugă peste el drojdia, se amestecă bine, se acoperă vasul cu un prosop curat și se lasă la crescut, într-un loc cald, pentru 20 de minute. În acest răstimp, ar trebui să-și dubleze volumul.
Până crește maiaua, se freacă bine gălbenușurile cu sarea (dacă folosiți), curmalele hidratate și blenduite, vanilia, coaja de lămâie și portocală, uleiul, laptele rămas și 100g de unt topit. 
Se cerne făina într-un castron mare. Se adaugă maiaua crescută și amestecul de gălbenușuri și se începe frământatul. 
Eu am folosit robotul de bucătărie și am frământat 15-20 de minute. Dacă se frământă manual, trebuie cam 30 de minute. După acest timp, aluatul trebuie să fie destul de moale și lipicios. Se adaugă restul de unt topit și nu se mai frământă, doar se împachetează cu mâna, dinspre margini către centru și se bate cu dosul palmei până se încorporează untul. 
Se acoperă castronul și se lasă la crescut aproximativ o oră, până își dublează volumul.

Între timp se pregătește umplutura.
Pentru umplutura cu nucă, se bat albușurile spumă, se adaugă pasta de curmale, pudra de roșcove cernută și nuca măcinată și se amestecă atent, folosind o spatulă, pentru a rămâne pufoasă.
Pentru umplutura cu mac, se fierbe în lapte macul măcinat amestecat cu pasta de curmale, până se îngroasă puțin (câteva minute). Se lasă la răcit.

Se împarte aluatul crescut în două bucăți și fiecare dintre acestea în încă două părți egale (pentru cozonac împletit).
Fiecare parte se întinde pe masă cu mâna, în formă dreptunghiulară. Se întinde deasupra umplutura și se rulează. Se repetă cu încă o bucată de aluat, urmând ca cele două rulouri să fie împletite și așezate în tava de cozonac.

La fel se procedează și cu bucățile de aluat rămase (al doilea cozonac).
Se pornește cuptorul la 180 de grade Celsius.
Cozonacii se mai lasă la crescut în tavă pentru 30 de minute. Se ung cu gălbenuș de ou și se dau la cuptorul preîncălzit până se rumenesc frumos deasupra. 
Pentru a verifica dacă sunt copți, se introduce un băț de frigăruie sau un cuțit cu lama foarte subțire în mijlocul cozonacului. Dacă acesta iese curat, cozonacul este copt.

Sweet dough wreath (Romanian traditional dessert)



This is a Romanian traditional recipe, usually made for the holiday of the 40 Martyrs of Sebaste (9th of March). It's usually made with sugar and soaked in honey or sugar syrup, but this version is baby friendly (no sugar and very little honey on top, just to stick the ground walnuts).
It's absolutely delicious, so it can make a nice dessert or snack on any day of the year.

Ingredients:
- 550g flour;
- 1 pack of dry yeast (9-10g);
- 220 ml warm milk;
- zest of one bio orange, grated (or 1/2 pack bio dehydrated orange zest);
- seeds of a vanilla bean (or1/2 tsp bourbon vanilla powder);
- 1 egg;
- 100g butter.
Extra (opționale):
- 1 egg for brushing on top;
- 1 Tbsp honey;
- 100g ground walnuts.

Method:
Place in a bowl the dry yeast, 2 Tbsp of flour and 4 Tbsp of milk and stir firmly until you get a thick paste. Set aside and let it rise a little bit, until you prepare the other ingredients (about 10 minutes).
In a big bowl (or in the food processor's bowl) sift the remaining flour, add the vanilla and the orange zest and mix well. In the middle, make well and add the yeast paste, the egg and the remaining milk. Knead using your hand or the kneading tool of the food processor (I used the latter) for about 10-15 minutes (the dough should be pretty soft and a bit sticky), then add the melted butter and continue kneading until you get a soft, non-sticky dough.

Grease a bowl with a little oil and place the dough inside, cover with a clean towel and place it in the warmest place of the kitchen (on a high cupboard). Let rise for about 1h,

Split the dough in 2 pieces, then split again every half in two equal halves and continue until you get 16 balls of dough, of approximately the same size.

Form the wreath: Roll every ball until you get a long, thin string (about the thickness of the little finger). Bend it at the middle and braid the two halves. Put the two ends together to obtain the shape of the letter "O". Bend the "O" in the middle and turn, so you get an "8". Place the wreaths in a tray lined with baking paper. Set the tray aside and let them rise for one more hour.

Optional: lightly whisk an egg and brush it over the wreaths.
Bake at 180 degrees Celsius (preheated oven) for 20-30 minutes, or until they get a golden crust.

Optional: when removed from the oven, brush them with a thin layer of honey and sprinkle some ground walnuts.

They are delicious! A bit crispy on the outside, fluffy and soft on the inside, orange flavoured and very little sweet from the honey drop on top.

Apple and walnut pastry rolls



I decided to vary a little bit the weekend desserts/snacks (too many muffins and biscuits) so these traditional Romanian pastry rolls sounded like a good idea (and indeed they were!). They are usually filled with Turkish delight or with jam but, since we avoid sugar altogether, I filled them with apple pieces covered with ground walnuts. They are pretty easy to prepare and they make a perfect snack for the little ones.

Ingredients:
- 150g butter;
- 150g sour cream;
- 4g dry yeast;
- 230g plain flour (+/- 10g);
- 1/2 tsp vanilla powder;
- 1/2 tsp  orange zest powder (optional);
- for the filling: 1 big apple, one handful ground walnuts.
* you can choose to omit yeast and the rolls will have the texture similar to biscuits; with yeast they resemble more the puff pastry. Yeast does not affect the taste!

Method:
In a bowl mix the flour, yeast, vanilla and orange powder. Add the butter (diced) and the sour cream and mix well until you get a firm, non-sticky dough (but not hard!).
Meanwhile, peel the apple, remove and discard the core and stem and cut it in sticks (about 1 x 1 x 2 cm), then roll every piece in the ground nuts until fully covered. Set them aside.
Cover the dough with cling film and place it in the fridge for at least 30 min. Cut it in 6 pieces; form a ball out of each piece. Roll each bowl in (more or less) round shape and cut triangles out of it. Place the apple pieces on the wider part of the triangle and roll towards the narrower side (see picture below).



Place the rolled pieces on a tray lined with baking paper and bake in the preheated oven (180 degrees C) for about 25 minutes (or until golden brown).
