Pumpkin vanilla cheesecake

As I was saying in a previous post, we are not big fans of simple baked pumpkin, but ever since I started to use it for different recipes, I started liking it more and more.
The idea of baking a pumpkin cheesecake came to me after visiting an amazing cake shop in Belgrade (it's called Mandarina and you can find it online here). I tasted more of their cakes, including a delicious pumpkin cheesecake, so I decided to make my own (babyfriendly a.k.a. sugar free) version of it.

For the crust I decided to use the pumpkin gingerbread dough (recipe here): half of it was enough for the cheesecake crust and half of it I made into gingerbread.
For the cheesecake you can use a cake tin with removable base or any round tin (deeper that the tart one). Roll the dough so that it covers the bottom of the tin and a little bit of the walls. Pierce it with a fork and bake it in the preheated oven, for 10-15 minutes at 180 degrees. Remove from the oven and set aside until the filling is read.

Ingredients for the filling:
- 200g cream cheese;
- 200g cream;
- 250g baked pumpkin puree;
- 1 tsp Bourbon vanilla / seeds from a vanilla bean;
- 1/2 tsp grated orange peel;
- 3 large eggs.

Mix all the ingredients in a food processor (or with a hand mixer) and pour the mixture in the cake tin, over the pre-baked crust. Bake at 180 degrees Celsius, in the preheated oven, for 45-50 min, until set (depending on the depth of the tin). Let the cake cool in the tin, then remove and place on a platter.

Cheesecake cu dovleac și vanilie

După cum spuneam și într-un articol anterior, nu suntem mari fani ai dovleacului copt simplu, însă de când am început să îl folosesc în preparate sunt din ce în ce mai încântată de el.
Ideea de cheesecake cu dovleac mi-a venit după o vizită la o cofetărie minunată din Belgrad (Mandarina se numește și o găsiți pe internet aici), care s-a lăsat cu degustarea mai multor prăjituri, printre care (evident) un delicios cheesecake cu dovleac. Mi-a plăcut ideea și am decis să fac, la rândul meu, o variantă baby friendly (fără zahăr, în principiu).

Pentru blat am decis că ar merge aluatul de turtă dulce cu dovleac (rețeta aici): o jumătate din compoziție a ajuns pentru blatul de cheesecake, iar din restul am făcut turtă dulce. Puteți folosi o formă de tort cu pereți detașabili sau orice formă rotundă mai adâncă. Se întinde o foaie subțire, se decupează în așa fel încât să acopere fundul tăvii și foarte puțin din margini, se înțeapă cu furculița în câteva locuri să nu se umfle la copt și se dă la cuptor (preîncălzit) pentru 10-15 minute, la 180 de grade. Se scoate și se lasă deoparte până când este gata umplutura.

Ingrediente pentru umplutură:
- 200g cremă de brânză (sau brânză dulce grasă);
- 200g de smântână;
- 250g de dovleac copt;
- o linguriță de praf de vanilie / semințele de la o păstaie de vanilie;
- 1/2 linguriță de coajă de portocală;
- 3 ouă mari.

Se amestecă toate ingredientele pentru umplutură (eu le-am pus în blender) și se toarnă amestecul peste blat. Se coace la 180 de grade pentru 45-50 min, până se încheagă (în funcție de adâncimea vasului). Se lasă la răcit în formă, apoi se poate scoate pe un platou.

Fruit sushi (vegan)


I saw this fruit sushi idea a while ago, on Tasty (the original here) and it seemed brilliant (it looked really good and seemed pretty easy to make). So, when I saw sushi rice in our local supermarket (they don't always have it), I bought it and I made the recipe.

Ingredients:
- 1 cup of sushi rice (or another short grain rice); 
- 1/2 cup coconut cream;
- 1/4 tsp vanilla powder (or the seeds of 1/2 vanilla bean);
- 2 kiwis;
- 2 mandarins;
- 1 ripe mango.
* this recipe contains no added sugar! If you like sweeter taste, add to the rice a sweetener of your choice.

Method (detailed photos of the method can be found at the end of this article):

Add one cup of rice to 1 and 1/3 cups of water, bring to a boil then reduce fire and let it simmer over low heat for 15-17 minutes. Do not stir! When the rice absorbed all the water remove from fire (taste it and if it's not completely cooked you can add a little bit more water and continue to boil or, if it didn't absorb all water you can leave it a bit more on the fire so the mixture gets pretty solid. Add 1/2 cup of coconut cream and the vanilla bean and stir. Let the rice mixture cool.
Cover a bamboo mat with cling film and spread about 1/2 of the rice on it, in a rectangular shape (if you don't have a bamboo mat use just the cling film). Place inside a row of kiwi sticks and a row of mandarin slices. Roll it and cover the roll with thin slices of mango. Wrap in cling film and let it cool in the fridge for 1/2h.  
Repeat the process with the remaining rice or form little rice balls and cover them with fruit slices (like nigiri).
Slice and serve.

Sushi de fructe (vegan)


Ideea de sushi de fructe am văzut-o pe Tasty (originalul aici) și mi s-a părut genială (mai ales că arăta foarte bine și părea ușor de făcut). De aceea, când am văzut în supermarket orez pentru sushi, n-am mai stat pe gânduri, l-am cumpărat și m-am apucat de treabă.

Ingrediente:
- o cană de orez de sushi (sau un alt orez cu bob scurt);
- 1/2 de cană smântână de cocos;
- un vârf de lgț. praf de păstaie de vanilie (sau semințele de la 1/2 de păstaie);
- 2 kiwi;
- 2 mandarine;
- 1 mango bine copt.
* această rețetă nu conține zahăr! Dacă preferați gustul mai dulce, adăugați un îndulcitor la alegere.

Metoda (fotografii detaliate ale procesului de preparare se regăsesc la finalul articolului):

O cană de orez se fierbe, la foc mic, cu 1 și 1/3 căni de apă, pentru aproximativ 15-17 minute, până se absoarbe toată apa (gustați orezul și dacă e nefiert mai adăugați un strop de apă, dacă apa nu s-a absorbit complet mai lăsați la fiert). Nu amestecați în orez în timpul fierberii!
Închideți focul și adăugați peste orezul fiert 1/2 de cană de smântână de cocos și un vârf de linguriță de praf de vanilie. Lăsați amestecul la răcit. 
Acoperiți o planșetă de bambus pentru sushi cu o folie de plastic și întindeți aproximativ o jumătate din cantitatea de orez pe aceasta (dacă nu aveți planșetă de bambus nu este nicio problemă, folosiți doar folia). În interior așezați un rând de kiwi tăiat bețișoare și alături un rând de feliuțe de mandarină. Rulați și acoperiți rulada cu felii foarte subțiri de mango, puțin suprapuse. Înveliți în folia de plastic și lăsați la frigider o jumătate de oră. 
Procedați la fel cu restul de orez sau formați biluțe și acoperiți-le cu felii de fructe (tip nigiri).

Feliați și serviți.

Pear and apple muffins


The story of these muffins started with some bio pears that I bought last weekend and that were already very soft (but still good) by this morning. I needed to use them for something, since they had a nice scent and I could guess they were also very sweet.  
I also had a new silicon mold, with a snowman, so I decided to make some very simple and fast muffins, that looked and smelled like winter.

Ingredients:
- 2 very ripe pears (you can use bananas as well - one big banana or 2 small ones);
- 2 eggs;
- 3 Tbsp coconut oil;
- 1/2 cup milk;
- 2 cups white flour;
- 1 tsp baking powder;
- 1 tsp cinnamon;
- 1/2 tsp. vanilla;
- 1/2 tsp. ground nutmeg;
+ optional: one apple, diced or chopped walnuts.

Mix the pears, eggs, coconut oil and milk in a food processor or in a bowl, using a hand mixer. Separately, mix the flour with the spices and baking powder and then add it to the blender.  Mix until you get a smooth batter and pour it in a bowl. Add the diced apple or the walnuts and stir. 
Split the batter between the muffin molds and bake in the preheated oven, at 180 degrees Celsius,for about 35-40 de minute, until they pass the toothpick test.

Briose (rapide) cu pere si mere


Povestea acestor brioșe începe cu niște pere bio pe care le-am cumpărat în weekend și care azi erau deja foaaaaarte moi, imposibil de mâncat ca atare dar nu stricate. A trebuit să fac ceva din ele, mai ales ca aveau un parfum superb și intuiam că sunt foarte foarte dulci. 
Aveam și o formă nouă de silicon, cu un om de zapadă, așa că am făcut niște brioșe foarte simple și foarte rapide, cu aspect și arome de iarnă.

Ingrediente:
- 2 pere foarte bine coapte (la fel de bine se poate folosi și o banană mare sau două mici);
- 2 ouă;
- 3 linguri de ulei de cocos;
- 1/2 cană de lapte;
- 2 căni de făină albă;
- 1 lgț. de praf de copt;
- 1 lgț. de scorțișoară;
- 1/2 lgț. praf de vanilie;
- 1/2 lgț. nucșoară măcinată.
+ opțional un măr tăiat cubulețe sau nuci tocate.

Se amestecă în blender (sau în castron, cu mixerul) perele, ouăle, uleiul de cocos și laptele. Separat se amestecă făina cu mirodeniile și se adaugă apoi în blender, peste celelalte ingrediente. Se mixează puțin și apoi se transferă compoziția într-un bol. Se adaugă mărul tăiat cubulețe și se amestecă ușor cu o lingură. Se pune compoziția în formele de brioșe și se coace în cuptorul preîncălzit, la 180 de grade, pentru 35-40 de minute, până trec testul scobitorii.

Apple roses


A couple of weeks ago, I saw in the Facebook newsfeed a video from Tastemade (click here for the original) with some apple "roses" that looked really tasty and easy to prepare. I didn't bake them immediately as the original recipe was using puff pastry (and I avoid the puff pastry from the market, because it's not really baby friendly). 
Today I decided to bake the apple roses, using a baby friendly dough - a butter and walnut biscuit dough (because I love the combination of walnuts and apples). It didn't turn out as easy to handle as the classic puff pastry (the walnuts make it a bit crumbly), but I managed to shape the roses and the taste was...simply amazing :)

Ingredients:
For the dough:
- 100g butter;
- 100g banana (one small banana);
- 200g flour;
- 100g ground walnuts;
- 2 quail eggs (or one egg yolk).
Pentru umplutură:
- 2-3 apples;
- a bit of cinnamon.

* This recipe does not contain sugar. If you like more concentrated sweets, you can serve these apple roses with a teaspoon of honey on top (I admit, I ate them like this and, in my opinion, honey+walnut+apples = a divine taste!)

Mix all the ingredients for the dough and knead until you get a firm (but not excessively strong), non-sticky dough (add a bit more flour if needed). Shape it in a ball, cover with cling film and place it in the fridge for at least 1/2h.
Meanwhile, halve the apples, remove the cores then finely slice the halves. Place a pot with water on the stove, over medium fire, add the juice of half lemon and when it starts boiling reduce heat and add the apple slices. Let them simmer over low heat for 2-3 minutes then drain them in a colander.

Remove the dough from the fridge, roll it in a square sheet and cut it in 5-6 cm wide strips. Place the apple slices on the whole length of the strips, round side out and straight side in the middle part of the strip. Fold the dough so the free half of the strip covers the upper part of the apple slices. Roll the strip to form the rose shape. Place the rose in the muffin tin, lines with special paper.

Keep going until you finish the dough and the apples. If you have some extra dough, make some biscuits out of it. Bake the roses in the preheated oven, at 190 degrees Celsius, for 35-40 minutes.
Continuați până terminați aluatul și merele. Dacă vă mai rămâne aluat, puteți forma niște biscuiți. Enjoy!
