I bought some very nicely colored courgettes (zucchini) and I tested two new (but very easy) recipes. The first is courgette rolls in walnut crust. Simply amazing!
For this recipe you will need:
- 1 courgette;
- 1 egg;
- ground walnuts (you can replace these with bread crumbs or any kind of ground nuts/seeds
Peel and slice the courgette and, using a cookie cutter, remove the center of every slice. My 2yo helped me do this :). Dip every piece of courgette first in flour, then in egg (beaten) and last in ground walnuts (or breadcrumbs).
Place the coated pieces on a tray lined with baking paper.
Bake in the preheated oven (200 C) until the crust becomes golden brown (about 20 minutes). Serve next to a yoghurt and dill sauce.
