Sweet potato pancakes



The fluffy, colored, tasty pancakes make a delicious breakfast for lazy Sunday mornings.
For the pancake mix you will need:
-1 egg;
- a cup of milk;
- one and a half cups flour;
- one and a half cups sweet potato cubes, boiled (about 1 small sweet potato or half of a big one);
- a pinch of baking powder.

For coloring:
- a handful of sour cherries (app. 10-15 pieces);
- a handful of blueberries;
- one Tbsp carob powder.

Add all the ingredients for the pancakes in a blender and process until smooth (if you are not using the blender, mix first the egg, milk, flour and baking powder and then add the sweet potato puree).

Split the pancake mix between 4 bowls. In the first one add the mashed sour cherries, in the second add the mashed blueberries, in the third the carob powder and the mix in the forth bowl will stay simple.

Heat a pan over medium heat. Take the first bowl and add the batter in the pan, using one spoon of batter for each pancake (don't use oil; if needed, you can wipe the pan with a tissue dipped in oil or melted butter). Repeat with all bowls, until all the pancake mixture is used.


Place the pancakes on a plate, alternating colors. Serve with Greek yogurt and forest fruits.
