Vegan fajitas



Whenever we feel the need for a refreshing lunch or a light dinner, I make these incredibly tasty vegan fajitas, packed with nutrients and low in calories (use wholemeal tortilla if you are on a special diet). They go well either with guacamole (for a complete vegan meal) or with some meat on the side. We tried them both ways and they are awesome.


To make the fajitas you will need:

1 pack of tortillas ( white or wholemeal),
1 big onion,
3 bell peppers - one red, one yellow, one green
300 g champignon mushrooms
3 garlic cloves
some spring onions or chives
vegetal oil of your choice

*a handful of fresh parsley (optional)
*a handful of hard cheese, grated (optional)

Method:

Thinly slice the onion (+ chives), the bell peppers and the mushrooms and mix them into a large bowl. Crush the garlic and add it to the veggie mix, then drizzle some olive oil on top. Set aside and leave the bowl covered for at least 1/2h.
Transfer the mix into a non-sticky frying pan, add a bit of water (if you are not worried about it being baby friendly, you can skip the water and just saute the mix) and cook over high heat for a few minutes, until the veggies soften.



Slightly toast the tortillas on both sides, using a non-sticky pan, add a few spoons of the cooked veggies, sprinkle some fresh parsley (and some grated cheese, for extra taste), wrap and enjoy!
