Tapioca pudding with bananas and red fruit topping

Tapioca pudding is a light, delicate dessert, perfect for any age. Similar to rice and milk pudding, it requires a little more attention during the preparation so that it doesn't come out like a hard jelly.

Ingredients:
200g tapioca pearls
1L plain milk
2 very ripe bananas
one vanilla bean
fruits pentru topping (I used sour cherries and forest fruit, but you can replace them with virtually any fruit)

Method: Wash the tapioca pearls in cold water. Meanwhile, boil some water (minimum 1 liter) in a large pot. Add the tapioca in the boiling water and let it simmer for about 5 minutes, while stirring continuously. You will notice that it starts producing gelatin and the pearls become transparent, while still having a white part in the middle. Remove from the heat and, using a strainer, wash the tapioca pearls under cold water, until all gelatin is removed. You can even wash them twice.
Bring the milk to a boil and add the washed tapioca pearls, the blended bananas and the seeds from the vanilla bean. Let the mixture simmer over low heat, stirring continuously, until it begins to thicken. Keep in mind that in this phase the pudding needs to be semi-liquid, it will get more solid once it cools down.

Using a ladle, pour the pudding in bowls or jars and add fresh fruit on top. Let cool and store in the refrigerator.
